Roberto’s Dubai New Chapter: Michelin-Starred Chef Enrico Bartolini, New Menu and Mid-Century Milan Interiors

Few Italian restaurants in Dubai have stood the test of time like Roberto’s. Since opening in DIFC in 2012, it has become a fixture of the city’s dining scene. Now it’s entering a new chapter, guided once again by Michelin-starred chef Enrico Bartolini, who returns to Dubai this month.

Bartolini has been Roberto’s Culinary Ambassador for a decade, and his role goes far beyond guest appearances. He works closely with the kitchen on menu development, training and regular reviews. That bond is personal too: Executive Chef Danilo Valla, who grew up in Alba, trained under Bartolini early in his career before joining Roberto’s in 2016.

On the plate

The menu balances much-loved signatures, such as Fettuccina Roberto’s and Tortello al Tartufo, with new dishes that put provenance first. The I Crudi raw selection now includes dry-aged and lightly marinated fish. Whole fish is cooked in a sea-salt crust and carved tableside. Ingredients come from carefully chosen Italian producers, from Pomodori D’Auria tomatoes to Riso San Massimo rice.

A Milanese makeover

The restaurant has also been redesigned by Forsite Creative, taking inspiration from mid-century Milan. By day, the dining room is all sculpted stone, rich wood and clean lines. As evening falls, deeper tones and dramatic lighting create a more glamorous mood.

Aperitivo N°1

The highlight for diners is Aperitivo N°1, launching at Scala on 2 November. Six bites created by Bartolini are paired with five cocktails, inspired by the Milan tram line that passes Teatro alla Scala. The menu is printed as a tram ticket. Expect fennel tartelette with oscietra caviar, saffron rice with gold, and broccoli with black winter truffle.

Roberto’s is at Gate Village Building 1, DIFC, and both the restaurant and Scala are open daily.
