Amanda Jenkins is the woman behind Cookie Conspiracy, a Dubai born luxury cookie brand flipping the script on what dessert can be. Think secret-agent aesthetics, limited drop flavours and packaging stamped like a sealed secret. It’s luxury meets attitude, and Amanda has made sure it’s unforgettable.
Alongside building the brand, Amanda is a personal trainer and someone who thrives on structure, creativity, and feeding people. She juggles dog mum duties, PT clients, recipe testing, baking logistics, brand direction, and social media with a kind of controlled chaos that somehow works.
Amanda’s got big ambitions for this brand, but right now she’s in the thick of the hustle, making sure every box that goes out is part of something bigger than just a dessert.
Today Amanda shares with us a day in her life and career and we can't wait to dive in!
4AM:
I’m up at 4am, eyes half open, reaching for coffee before my thoughts start sprinting. I check in with PT clients, reply to Whatsapp messages, and mentally run through the to-do list while getting ready to walk my little frenchie, Dexter, around the community.
5AM–10AM:
Straight into training clients. It’s a structured but energising few hours. Then if I’m lucky I can get in a quick session myself before heading to the bakery which is just seven minutes apart from the gym so I can get between the two with ease.
12pm:
Cookie production is in full swing. This is when the kitchen turns into organised chaos and production hits peak flow. The cookies are out, toppings are on, packaging is prepped, and I’m in full logistics mode. There is definitely a system that is followed with tight timings and strict quality control that results in our delicious cookies and loyal customer base.
3pm:
I head back to the gym for my afternoon clients usually with a few cookies in tow. I’m definitely a believer in balance. I eat a cookie everyday. You can train, and enjoy good food and you can still look and feel great. That ethos is baked into Cookie Conspiracy’s identity. At this point in the day If I get to eat lunch before 3pm, I consider it a personal win.
5pm-8pm
This is my logistical hustle window. I might be checking in with cafés about stocking frozen dough, finalising corporate gifting proposals or deep diving into something completely rogue like planning a secret agent style dossier for a new drop.
10PM:
Finally In bed, but my brain’s still going. It’s like falling asleep inside a Pinterest board of conspiracy theories, cookie flavours, and packaging inspo for something exciting coming soon. But I wouldn’t trade it for anything.
