Mitun is a Clinical Dietitian with 20+ years of experience in the UAE and the founder of Simply Healthy, a health and wellness ecosystem that includes personalized meal plans (Simply Healthy Diets), fitness coaching and personal training (Simply Healthy Fit ), and a functional supplement line (Simply Healthy Balance).
She specialises in metabolic and hormonal health, working with patients managing PCOS, insulin resistance, weight gain, gut disorders, and chronic fatigue. Her approach combines evidence-based medical nutrition therapy with a real-world understanding of the modern UAE lifestyle.

7 AM:
My mornings begin with intention. I start the day with an anti-inflammatory drink made from fresh turmeric root and a cup of saffron water both rooted in ancient wellness traditions. Then I take my own collagen-antioxidant blend from Simply Healthy Balance to kickstart my system.
Three days a week, I head straight to the gym for a weight training session with our Simply Healthy Fit coaches. Strength training has changed my energy, posture, and metabolism.
On the remaining three days, I ease into my morning with matcha, meditation, brain games as a form of self-care, always with some music.
9 AM:
Breakfast is always based on high-protein foods like eggs, along with anti-inflammatory ingredients such as mixed seeds, chia, berries, and avocado. When I’m in a rush, I opt for a protein smoothie with organic nut butters. I eat to feel sharp and energized, knowing I have a full day of responsibilities ahead.
10AM:
By 10 AM, I’m at Northwest Clinic seeing clients and patients. My sessions are part science, part storytelling. No two cases are the same. I spend time understanding each person’s story—their lab reports, food habits, lifestyle stressors, and even their relationship with food. We often talk about hormones, sleep, inflammation, gut health, or mental well-being, because food is only one piece of the puzzle.
Whether it’s a 42-year-old woman with PCOS and hormonal imbalances or a young man struggling with gut health and brain fog, I work to find root causes, not just treat symptoms. It’s a mix of clinical precision and human empathy.
This deep one-on-one work continues until 2 PM, and it’s the core of what I do.
2 PM:
Lunch is usually a quick, clean meal from my own Simply Healthy kitchen—protein-packed quinoa edamame bowls, grilled salmon with millet, or mixed lentils and rice with ghee. I often taste-test new recipes for our meal prep menu or supplements.
Then I shift into business mode: reviewing new dishes, product packaging, website updates, brand collaborations, or speaking with my team about client feedback.
I also use this time to record a reel, write an article for the press, or prepare for a podcast or wellness summit. Public education is a big part of what I do, and I like to bring science-backed truths with a dose of relatability.
This is also when, on some days, I meet my BNI (Business Network International) colleagues for a one-on-one meeting or work on strategy with my team for our new wellness verticals. I spend time diving into research and development for Simply Healthy Balance, our functional supplement line. I’m involved with my team in everything—ingredient sourcing, testing blends, municipality approvals, packaging, and marketing.
All supplements are crafted based on real client needs. Every formula I create stems from what I see in practice—the gaps, the struggles, the silent symptoms.
4 PM:
From 4 to 6 PM, I return to clinic sessions. Many clients are working professionals who prefer evening slots.
We troubleshoot what’s not working, re-align on habits, and explore new strategies—biohacks, meal tweaks, stress responses. It’s real, messy, and transformational.
7 PM:
Evenings are precious. When I reach home, I switch off practitioner mode to be fully present with my son and husband.
We usually all eat from the Simply Healthy kitchen. It feels like a small, quiet blessing to have nourishing meals ready in the fridge, giving us more time to be together.
We chat and unwind over dinner. It’s my time to just be “Mum” and “Mitun,” not the expert.
10 PM:
While I try to shut down work by 9:30, the reality is that sometimes I scroll, sometimes I plan content, and some days I’m out socializing or rehearsing for a performance as a singer. But most nights, I carve out time for myself.
I might put on some soft music, read something uplifting, or say a quiet prayer. Meditation or breathwork grounds me.
This is my pocket of peace—and it’s just as important as any diet or workout.
