Kairos Coffee Assembly Brings Slow Ritual to Al Quoz

In Al Quoz Creative Zone, a new café is making the case for patience. Kairos Coffee Assembly is home to the UAE's first Bellwether Shop Roaster, an electric, zero-emission machine that roasts beans daily in full view of guests, right at the room's centre - so the coffee in your cup was, days earlier, still green in that same space.

Everything here leans into that unhurried instinct. The V60 pour-over is treated less like an order and more like a small ceremony, held at a two-metre stone Coffee Assembly table hand-carved by SHED Studio. Croissants are laminated by hand each morning, and dishes like the Twice-Baked Cashew Nut pastry and Eggs on Eggs on Eggs are made entirely from scratch on-site.

The details extend beyond the menu: hand-embroidered linen vests by Kissagoi, wooden trays cast with the studio's own leftover wood dust, and rotating wall exhibits currently showcasing a ceramic mural by Kamal Alzubi.

For founder Shiraz Sarwar, who previously built a delivery-only coffee brand, Kairos is about the opposite instinct: real conversation, taken slowly. As he puts it, it's designed for "the anti-convenience and unhurried way of life."
