Mandarin Oriental Downtown, Dubai introduces Noia by the Pool, a modern Greek rooftop destination set on the 11th floor, offering refined indoor and alfresco dining alongside breathtaking views of the Arabian Gulf.


The concept unfolds across two distinct yet complementary experiences: the restaurant and the poolside.

 

// The Restaurant 

 

Designed as an elevated yet relaxed dining experience, Noia by the Pool draws inspiration from the warmth, generosity and sun-drenched spirit of the Aegean, reinterpreted through a contemporary lens. Open-air terraces sit alongside an elegant indoor dining room, creating a fluid setting that transitions effortlessly from sunlit lunches to atmospheric evenings under the stars.

 

At the heart of Noia by the Pool is a contemporary expression of Greek cuisine, guided by seasonality, freshness and provenance, under the direction of Head Chef Michalis Margaritis. Born and raised in Greece, Chef Michalis brings over 12 years of international experience, drawing on a deep-rooted understanding of Mediterranean and Greek culinary traditions.

 

Centred around a sharing-style format with an emphasis on seafood and vegetables, the menu encourages interaction and connection, with subtle tableside preparations adding moments of engagement. The pace is deliberately unhurried, reflecting the ease and warmth of Mediterranean dining.

 

The Raw section sets the tone with clean, expressive flavours, from freshly Shucked Oysters served with mignonette and herbs to Shrimp Gazpacho made with Greek tomatoes and fennel pollen, alongside sashimi-style wild sea bream from the Aegean and delicately balanced tuna and beef tartares. Salads offer a lighter, produce-led counterpoint, including a classic Greek Salad with aged feta and Kalamata olives, Baked Beetroot with feta mousse and walnuts, and Barbecue Vegetables finished with Greek yoghurt dressing. Appetisers anchor the menu in tradition, with original Greek Mezze served with grilled pita, Prawns Saganaki with tomato and aged feta, and freshly prepared Octopusand Calamari highlighting freshness and flavour. 

 

Main courses reflect Noia by the Pool’s coastal Mediterranean identity, with fish and seafood at the forefront, balanced by select dishes from the grill. Greek classics are reinterpreted with restraint, from Beef Giouvetsi with orzo and mizithra to Seafood Orzo layered with clams, carabinero and baby calamari, alongside Lobster Linguine prepared with fresh tomato and basil. Grilled fish, souvlaki and premium meat selections including lamb chops and Black Angus beef complete the offering.

 

Desserts draw on traditional Greek flavours with a modern touch, including Galaktoboureko with orange blossom syrup, Ekmek Kadaifiserved with pistachio ice cream, and Greek yoghurt–based creations.

 

The drinks offering follows the same ingredient-led philosophy. Cocktails are crafted using vegetables, fermentation, herbs and natural infusions, resulting in light, bright and refreshing serves. A considered non-alcoholic selection includes spice-infused cordials, sparkling pressés, homemade speciality lemonades, iced teas, tonics, freshly squeezed juices, smoothies and shakes. The wine programme places Greek varietals at its heart, celebrating ancient heritage regions, balanced with a curated selection of approachable international classics, bringing terroir, history and storytelling into every glass.

 

// Poolside Experience


Adjacent to the restaurant, Noia by the Pool also offers a distinct daytime poolside experience on the rooftop terrace. Designed as a calm, Greek-inspired retreat, the pool area features sunbeds and cabanas overlooking the Arabian Gulf, paired with a relaxed, intuitive service style.


The poolside menu is a natural extension of Noia’s kitchen philosophy, the same ingredients, the same Mediterranean soul, adapted for a more laid-back setting. Dishes showcase Greek flair through light, nourishing plates, with a strong emphasis on plant-based options, fresh seafood and minimally processed options. The result is food that feels effortless, wholesome and well-suited to long, sun-filled afternoons.


Guests can also enjoy an impressive selection of fresh juices, wellness tonics, healthy smoothies and refreshing cocktails and mocktails throughout the day.


Noia by the Pool is overseen by Tanguy Mourlon Beernaert, General Manager of Noia by the Pool, who brings extensive Mandarin Oriental experience to the role, having previously held senior positions including Casa Amor at Mandarin Oriental Jumeira, Dubai. His focus is on delivering an intuitive, welcoming guest experience grounded in quality, consistency and understated luxury.
